From the Chelchele washing station, in the village of Chelchele, in the district of Kochere, in the Yirgacheffe region. These coffees are known for a nice backbone of sweetness from toffee and/or soft nuts like almond, with a floral and citrus overtone.
Coffees in Ethiopia are typically grown on very small plots of land by farmers who also grow other crops. The majority of smallholders will deliver their unprocessed coffee to a nearby washing station, where their coffee will be sorted, weighed, and paid for. The washing stations serve as many as several hundred to sometimes a thousand or more producers, who deliver cherry throughout the harvest season: The blending of these cherries into day lots makes it virtually impossible under normal circumstances to know exactly where the coffee is coming from. However, traceability is something that is very important to us as a roaster, Which is why we enjoy working with cafe importers like Cafe Imports who go to extraordinary lengths to ensure the coffee is not only coming from the same washing station every year but is farmed ethically and has been traded at a fair price.
We have been delighted by the sweet florals of this natural lot, like chamomile, honeysuckle and jasmine. With a delightful mouthfeel like cream and peaches as well as light citrus reminiscent of clementine.
